Terroir
Natural factors
- Altitudinal range between 250 and 550 m a.s.l., with a Huglin bioclimatic index between 1,700 and 1,800.
- Preferred soils are calcareous-marly, well-endowed with clay, situated exclusively on hillsides; humid valley floors and flat terrain are excluded.
- Climate characterized by moderate sunshine, good diurnal temperature variation, and limited relative humidity, favorable for sparkling-wine grape varieties.
- Hillside zone to the right of the Tanaro river, encompassing the southern provinces of Piemonte (Alessandria, Asti, Cuneo).
- For Pinot nero, calcareous soils rich in clay and silt are preferred; for Chardonnay, marly-calcareous soils are favored over sandy ones.
Human factors
- Manual harvest into small perforated crates to preserve the integrity of the clusters through to pneumatic pressing.
- Riserva with a minimum lees aging of 36 months; base sparkling wine at 24 months.
Product characteristics
- Spumante Riserva: minimum aging on the lees of 36 months for both white and rosé; the base Millesimato reaches 24 months.
- Chardonnay retains good acidity even at altitude; Pinot nero favors calcareous soils rich in clay and silt.
