- Altitude of around 1,000 m above sea level, with slow and uniform ripening comparable to higher-latitude regions.
- Daily temperature variation during ripening: highs of 30–35 °C and lows of 13–15 °C, through to early October.

- Official recognition granted by the Order of 23 April 2009, published in the BOE on 15 June 2009, under Law 24/2003.
- The appellation's reputation is founded on viticultural and winemaking expertise and on the slow ripening at ~1,000 m, which develops sugars, polyphenols, and varietal aromas.
Product characteristics
- The diurnal temperature range (30–35 °C / 13–15 °C) promotes the ripening of skins and seeds, which are key to organoleptic quality.
