Natural factors
- Vineyards at 520–720 m elevation on the Αμύνταιο plateau, Florina Prefecture — among the highest ΠΟΠ zones in Greece.
- Soils are alluvial in origin (ancient lacustrine deposits), light to medium in texture, with excellent drainage.
- The αμμώδες soils favour the most typical expression of the Ξινόμαυρο variety within the zone.
- The distinctive microclimate of the Αμύνταιο–Petrades–Xino Nero zone imparts elevated acidity (malic + tartaric acid).
- Marshy areas are explicitly excluded from the ΠΟΠ Αμύνταιο production zone.
Human factors
- Official Ο.Π.Α.Π. recognition was granted in 1972, while the Ε.Α.Σ. was founded in 1945 and its winery established in 1959.
- The first experimental sparkling wine vinifications from Ξινόμαυρο were undertaken in 1971 by the Ε.Α.Σ. Αμυνταίου.
Product characteristics
- Ξινόμαυρο from Αμύνταιο is characterised by a rich, complex bouquet, a delicate body, well-structured tannins, and high acidity that favours ageing.
- The elevated acidity (malic + tartaric acid), combined with a fruity and floral character, makes the grapes ideally suited for αφρώδεις οίνους.
