Natural factors
- Soils enriched with calcareous scree derived from the Middle Jurassic escarpment, locally mixed with "chailles" — siliceous flint nodules
- Pupillin: soils on very deep, clayey, and compact iridescent marls, in a rugged relief rich in calcareous scree
- The cliffs of the limestone plateau shelter the vineyard from north and east winds, ensuring maximum sun exposure
Human factors
- Arbois is home to the first French wine cooperative (1906) and an appellation defence syndicate established as early as 1908, issuing certificates of origin

Product characteristics
- Vin jaune: a characteristic "goût de jaune" with notes of walnut, apple, candied fruit, and spice, a deep golden-amber robe; capable of ageing 50 to 100 years
