Natural factors
- Virtually exclusive bedrock: brown Cambrian schists, fissured, nutrient-poor, with low water retention capacity.
- Extreme relief: altitude ranging from 0 to 917 m (Pic de Sailfort); vines on terraces up to 400 m along the Côte Vermeille.
- Sunshine exceeding 2,600 hours per year (specifications); approximately 2,488 hours per year on average for 1991–2020 in Perpignan (Wikipedia).
- Tramontane (north-west): dominant wind approximately 130 days per year, desiccating and health-promoting for the vines; sea breeze (E/SE) moderates summers.
Human factors
- The "bail à complant" (predating the year 1000) persists on more than 50% of plots, encouraging the interplanting of grape varieties within a single parcel.
- The appellation "Banyuls" was legally delineated on 18 September 1909 for vins doux naturels, then recognised as an AOC by decree on 6 August 1936.
Product characteristics
- Reductive ageing ("rimage") → fresh red fruits, cherry, kirsch; oxidative ageing ("traditionnel") → roasted coffee, cocoa, walnut, rancio.
