Human factors
- From the 7th century onwards, bishops traded Quercy wines; Peter the Great established it as the official wine of the Tsar's court and as the Orthodox communion wine.
Product characteristics
- Deep violet-black to dark purple in colour when young, with aromas of black fruits and spices (liquorice, cocoa, anise).
- With age, the tannins integrate into a dense, rounded structure, and aromas of truffle emerge.
