Natural factors
- Mediterranean climate with sub-desert nuances: average ~17 °C, mild winters (10–12 °C), hot summers (24–27 °C), frost rare.
- Rainfall ~300 mm/year, concentrated in autumn–winter; summers are very dry with occasionally torrential rain events.
- Soils classified as Calcixerolls, deep, developed over carbonated silty materials; mechanical breaking of the calcareous hardpan is sometimes required.
- To the east, the Mar Menor acts as a climatic buffer, moderating temperatures and promoting natural over-ripening in white varieties.
Product characteristics
- Whites: aromatic, fresh and fruity, with high sugar, glycerin and balanced acidity; reds: round and structured, rich in colour and tannins.
- Fermentation-arrest technique combined with microfiltration allows the production of medium-dry, medium-sweet and sweet wines; natural over-ripening further supports this style.
