Terroir
Natural factors
- A rectilinear, tectonically formed escarpment running approximately 25 km (NW/SW), between limestone plateaux to the west (400–500 m) and the Bresse plain to the east (~250 m).
- Cool oceanic climate with continental and southern influences, ~750 mm/year, mean annual temperature 10.5°C; sheltered from the east by the Morvan massif.

- Calcareous and marly substrates of Middle and Upper Jurassic age, with localised dolomitic intercalations.
Human factors
- AOC established in 1937 for red wines from communes outside the most reputed crus; the generic name 'vins de Beaune' had previously been used for blended wines.
- Pinot noir trained at densities above 9,000 vines/ha; aged for several months to develop cellaring potential depending on vintage and commune.
