Natural factors
- Soils are schistous to the west and clay-limestone (Cenomanian, Turonian, Senonian, Eocene) to the east, all with moderate drainage.
- The climate is oceanic to the west (mild winters, moderate summers) shifting to semi-continental to the east, with 550–650 mm of rainfall in the Sologne viticole.
- The Loire and its tributaries act as a thermal regulator throughout this zone.
Human factors
- As early as 1811, Ackerman was producing sparkling wines by the traditional method, exploiting the capacity of chenin B to develop a second fermentation.
- The AOC sets strict rules: hand harvesting, whole bunches at the press, gentle pressing, and extended ageing on lees.
Product characteristics
- Effervescence of fine, persistent bead; nose of white flowers, peach, or apricot; fresh and harmonious palate.
