- Medium-textured soils (SL, SCL), neutral pH, with low calcium carbonate content.
- Climate close to maritime but with pronounced continental tendencies; mean summer temperature 26.3°C, with winters frequently dropping below 0°C.
- Mean annual rainfall ~620 mm with a μεσογειακό κλίμα distribution (October–April); evapotranspiration exceeds precipitation during the growing season.

Human factors
- The ancient Thracian tribe of the Kikones were pioneering viticulturists in Θράκη; Homer references their wine in both epics.
- Before phylloxera (early 20th century), the vineyards of Soufli covered approximately 7,000 stremma; after 1920 they were replanted on phylloxera-resistant rootstocks.
Product characteristics
