Terroir
Natural factors
- Soils exclusively on Upper Visean schists, sandy and fissile, grey to ochre, acidic and low in organic matter.
- An area of 10 km × 4 km spanning 7 communes in the Hérault, ranging from 95 m (Autignac) to 696 m (Pic de la Coquillade, Cabrerolles). (via Wikipedia · CC BY-SA 4.0)
- Mediterranean climate with mountain influence: rainfall below 700 mm/year, annual heat summation of 1,800 °C. (via Wikipedia · CC BY-SA 4.0)
- Well-drained soils: the soft schists break apart under cultivation, ensuring a steady supply of water at depth.
Human factors
- The grenache and syrah varieties are grown alongside carignan and cinsaut; 80% of production is red wine.
Product characteristics
- Reds: deep colour, ripe fruit, spice, a liquorice finish, silky tannins; can be cellared 5–10 years, gaining in refinement. (via Wikipedia · CC BY-SA 4.0)
- Whites: pale to deep yellow in appearance, with aromas of ripe apricot or dry almond; rosés are pale and fresh, best drunk within the year.
Terroir / wine link
- The heat-retention effect of the schists releases the day's warmth at night, creating optimal ripening conditions for late-ripening varieties such as carignan and mourvèdre.
