Terroir
Natural factors
- Duna-Tisza-közi lowland plain: elevation <120 m above sea level, maximum relief of 10–15 m.
- Dominant soil: calcareous sand (humic and drift sand), with buried meadow soil in the subsoil and calcareous lösz patches.
- Sandy soil with 75%+ quartz content: phylloxera immunity, rapid warming, but lower mineral content.
- Kontinentális klíma: mean annual temperature 10–11 °C, 2,000 sunshine hours per year, 450–500 mm annual precipitation.
- Water management is balanced by near-surface groundwater and Lake Kolon; frost risk in winter, spring, and autumn.
Human factors
- The Arany sárfehér variety was selected from a local vineyard in 1873; its name changed three times (izsáki sárfehér → izsáki → Arany sárfehér in 1999).
- Head-trained vines with short spur pruning; on hillsides, high cordon with cane-and-spur pruning – sparkling wine has been produced on-site since 1972.
Product characteristics
- Pale green or light straw-yellow colour; aromas of quince, wild pear, and medicinal herbs.
- Pronounced acidity, moderate alcohol, recommended for shorter ageing; as a Pezsgő, fine CO₂ distribution and persistent bead.
