- Mesozoic carbonate bedrock overlaid by Miocene calcarenites, Pliocene, and Pleistocene sediments.
- Five named geological formations: from the Calcari di Altamura (Cretaceous) through to the Depositi Marini Terrazzati (Pleistocene).
- Three soil types: deep argille towards Veglie, deep sandy soils towards Copertino/Carmiano, and shallow reddish soils towards the Ionian coast.

Human factors
- The DOC was established in 1979, though local producers had already united in 1976 to move beyond a reputation for 'cutting wines' and pursue quality.
