Natural factors
- 41 communes, Aude valley, between 100 m and 500 m in elevation depending on relief (hills to the north, steep slopes to the south)
- The 'Autan' unit (100–200 m, ~550–600 mm/year): hot and dry climate, wedged between the Corbières and Chalabrais, tempered by the Aude river (via Wikipedia · CC BY-SA 4.0)
Human factors
- The monks of the Abbaye de Saint-Hilaire recorded a sparkling wine as early as 1531, considered the first produced anywhere in the world.
- The name 'Blanquette' derives from the mauzac B grape variety, whose leaf undersides are covered in a thick white down; the AOC was recognised on 18 February 1938.
Product characteristics
- Still whites (chardonnay, chenin, mauzac): full-bodied and rich, with aromas of pineapple, toasted almonds, hazelnut, vanilla, and liquorice; chenin contributes floral notes and minerality. (via Wikipedia · CC BY-SA 4.0)
- Reds: a blend of Atlantic and Mediterranean varieties, showing a profile of prune, liquorice, garrigue, and spice; swirling also releases leather aromas.
