Natural factors
- Cool oceanic climate with continental influences: mean annual temperature 10.5 °C, rainfall > 1,000 mm/year
- Relatively dry and windy autumns, conducive to the late ripening of the grapes
- An appellation covering 105 communes in the Jura, within the natural region of the Revermont
Human factors
- Long-standing tradition: Macvin has been known since the 9th century under the names 'maquevin' or 'marc-vin', consumed locally on festive occasions.
- The marc is distilled in a Jurassian pot still fitted with 'Raschig' rings, without rectification; the resulting eau-de-vie is aged in wood for a minimum of 14 months.
Product characteristics
- On the palate: rich and predominantly unctuous, with a well-judged sugar/alcohol balance; best served cool (6–11 °C) and capable of ageing for many years.
Terroir / wine link
- Clay-limestone marly soils with a surface layer of small stones: depth-level freshness and good drainage promote the ripening of Jurassian grape varieties.
