Terroir
Natural factors
- Mixed soils: alluvial plains, marine terraces, clayey slopes, and marly limestones coexist within the same zone.
- Mediterranean climate with mild winters (above freezing), autumn-winter rainfall, and hot, dry yet well-ventilated summers.
- Soil reaction ranging from alkaline to sub-alkaline, with good drainage and water-retention capacity favorable to root development.
- On the more calcareous and clayey marne of the upper hillsides, Chardonnay and Chenin blanc are cultivated, destined in part for sparkling wine production.
- The thermal diurnal range from the summer phase through harvest promotes grapes rich in polyphenols and aromatic precursors.
Human factors
- A centuries-old viticultural tradition, cultivating both indigenous and allochthonous varieties in the pedoclimatically most suitable soils for each cultivar.
Product characteristics
- Vintage whites: floral and fruity aromas with sapidity; those from alluvial plains lean toward sweet spice (Chardonnay), while those from higher elevations display varietal fruitiness and sharp floral notes.
- Wines from dried grapes: acid-sweetness balance with notes of dried fruit (walnuts, almonds, pistachios), orange marmalade (alluvial soils), or pineapple, apricot, and dried fig (marine terraces).
