Terroir
Natural factors
- Clay and silty-clay soils, low in coarse fragments, derived from the dissolution of marine rocks, rich in potassium and low in organic matter.
- The surface 'crusta', when present, is broken down during tillage, generating white soils rich in coarse fragments but low in active limestone.
- Vineyards between 60 and 250 m a.s.l. with predominantly flat aspect; gentle slopes occur only near the Sub Appennino Dauno.
- Hot, arid climate: annual rainfall of 400–650 mm concentrated 70% in autumn and winter; only approximately 250 mm during the vegetative period from April to September.
- Summer temperatures rarely exceed 35 °C and almost never fall below 0 °C in winter; summer minimum temperatures seldom drop below 18 °C.
