Terroir
Natural factors
- Bedrock of shelly limestone, occasionally outcropping at the surface, with skeletal calcareous soil on the upper part of the slope.
- Colluvial chernozem soils and true cernoziom at the foot of the slope, formed on loessoid colluvial material enriched in calcium carbonate.
- Moderate rainfall regime in July–September (157 mm) and 1,622 hours of sunshine during the growing season, favourable to late-harvest over-ripening.
Human factors
- Principal profile: sweet, aromatic wines from Tămâioasă Românească, Busuioacă de Bohotin, and Grasă, harvested at over-ripeness.
- Botrytisation occurs on the upper third of the slopes, producing wines with honey aromas and a minimum of 40 g/l residual sugar.
Product characteristics
- Aromatic and naturally sweet wines with at least 40 g/l sugar and a non-reducing extract of 25 g/l, a profile unique in the country.
- Botrytisation on the upper third of the slopes, yielding wines with an intense honey aroma.
Terroir / wine link
- The skeletal and carbonated cernoziom soils over shelly limestone favour the accumulation of sugars, phenolic compounds, and aromatic precursors in the grapes.
