Natural factors
- Vineyard with south-eastern exposure, at elevations up to 800 m, on the slopes of Όλυμπος.
- Continental μεσογειακό μικροκλίμα with mild winters and cool summers, favourable for slow ripening.
- Soils of exceptional diversity: six mechanical composition categories and a pH range of 4.24–8.17.
- A zone framed by Κάτω Όλυμπος (1,587 m) and Όσσα (1,978 m), with the influence of the Thermaic Gulf.
- Some 50.5% of soils lack calcium carbonate; slope gradients range from 2 to 20%.
Human factors
- The appellation Ραψάνη was officially recognised by Law 5506/1932 and Ministerial Decision 110822/16.09.32, placing it among the first Greek ΠΟΠ appellations.
- In the 19th century, the people of Ραψάνη transformed the barren slopes of Όλυμπος into vineyards planted with the appropriate varieties.
