Terroir
Natural factors
- Mediterranean climate with winter minima of 6–7 °C, summer maxima of 25–26 °C, and approximately 650 mm of annual rainfall, concentrated in winter.
- Salentine Peninsula: calcareous and calcareous-dolomitic ridges (serre salentine) alternating with near-flat surfaces between Lecce and Brindisi.
- Deep clay-loam soils to the west, sandy clay-loam soils in the Brindisi area; very shallow coastal soils (bedrock at 25–50 cm), restricting root penetration.
Human factors
- Low-trained, high-density vine cultivation to promote more pronounced organoleptic characteristics compared with sprawling training systems.
Product characteristics
- Low-trained, high-density vine cultivation: encourages low yield per vine and more concentrated organoleptic characteristics.
Terroir / wine link
- Deep clay-loam soils to the west, sandy and shallow soils toward the coast: restrict root penetration and concentrate production.
