Natural factors
- Cordillera Subbética: vineyards situated between 700 and 1,850 m in altitude, with slopes ranging from 7% to over 30%.
- Mountain Mediterranean climate with continental characteristics: long, wet winters, long, dry summers, and extreme temperature swings (39°C / -7°C).
- North-westerly winds in summer combined with altitude generate diurnal temperature ranges of approximately 20°C, extending the ripening period of the grapes.
- Soils of low to medium fertility, loamy or clay-loam in texture, slightly alkaline, low in organic matter, and well-drained.
- The delimited zone comprises exclusively highland areas, restricted to municipalities within the Sierra Sur de Jaén.
Human factors
- A wine tradition dating back to the Arab period; harvesting is mandatory by hand, variety by variety, at each variety's optimum moment.
- Yields are limited to a maximum of 8,800 kg/ha; delimitation is restricted to highland zones in order to guarantee typicity.
Product characteristics
- Young reds: vivid colour and a strong fruit-forward nose; aged reds: complex, blending varietal aromas with notes of oak.
