Terroir
Natural factors
- Bedrock: limestones and dolomites with Dinaric fold structures; crvenica and brown soils over vapnenac predominate.
- Fliš soils: carbonate-grey and brown soils on fliš occur alongside crvenica; deep alluvial soils in karst poljes.
- Climate mild mediteranska klima; sum of effective temperatures during the growing season >2,000 °C; annual rainfall ~819 mm, with dry periods in summer.
- Frequent strong winds dictate the selection of varieties with more vigorous shoots; uneven rainfall distribution allows for dry, warm autumns.
- Relief is hilly-karstic with terraced vineyards enclosed by dry-stone walls (prizidi); shallow, skeletal soils.
Human factors
- The flowering of Dalmatian viticulture from the mid-19th to the early 20th century: ~100,000 ha of vineyards, annual production >600,000 hl, with more than two-thirds destined for export.
- Geographical isolation preserved indigenous varieties: Maraština, Pošip bijeli, Trbljan, Babić, Plavina, Plavac mali crni, and Tribidrag.
Product characteristics
- Red wines: ruby to deep red in colour, full-bodied, with balanced tannins, rich fruit and spice aromas; well suited to ageing.
- White wines: crystal clear, varying in the intensity of yellow colour, medium in alcohol, with a rich varietal palate and aromas (floral, fruity, spicy).
Terroir / wine link
- Mediteranska klima (sum of active temperatures >2,000 °C, dry autumns) enables overripening and desiccation of grapes → desertno vino with 28–32% residual sugar.
- The heterogeneous vapnenac-based soil composition contributes to higher levels of microelements in the grapes → wines are mineral, aromatic, and extract-rich.
- Crvenica and brown soils over vapnenac combined with mediteranska klima and abundant sunshine hours create conditions for polyphenolic maturity → red wines suited to ageing in wood.
- Geographical isolation slowed the penetration of international varieties → a rich collection of indigenous varieties preserved (Maraština, Babić, Plavac mali crni, Tribidrag, and others).
- Fliš soils near the sea, especially around Primošten, provide a distinctive terroir for Babić — a wine recognised and esteemed worldwide.
- Frequent strong winds dictate the selection of varieties with more vigorous shoots, representing a direct adaptation of the varietal portfolio to the climatic particularities of the ZOI.
