Natural factors
- The soil is predominantly černozem with a sand and clay content; a heavy clayey subsoil retains moisture even during dry autumns.
- The area lies at the foot of the Biele Karpaty, in a rainfall zone averaging 565 mm per year and 1,857 hours of sunshine annually.
- Loamy to clay-loam soils impart higher mineralité to the wines; the average sugar-free extract reaches up to 19.0 g/l.
- Underground cellars at depths of 1.5–5 m within the hillsides maintain thermal stability of 8–15 °C and provide appropriate wine ageing of 12–18 months.
- Archaeological finds of viticultural tools at Kopečnica (part of the Great Moravian Empire) date grape growing in this area to the 9th century.
Human factors
- Skalický rubín was created in 1924 and has been protected in the WIPO register in Geneva since 1967.
- The grapes are harvested as late as the end of October, pressed in cellars adjacent to the vineyard, and the wine is aged for 12–18 months.
Product characteristics
- Ageing for 12–18 months imparts a delicate fruity bouquet and velvety palate; the clay-loam soils contribute to a higher mineralité.
- Prívlastkové výber z hrozna wines are characterised by high extract content and aromatic complexity; barrique, chips, and ľadové or slamové vína are not permitted.
