Terroir
Natural factors
- Soils developed predominantly on vapnenac and dolomite; crvenica, brown soils over vapnenac, and brown soils over fliš prevail.
- Terraces on fliš and Quaternary gravels are especially important for viticulture; terraces on Cretaceous vapnenac have a higher skeleton content.
- Dry, warm summers with low rainfall during the growing season (~300 mm) favour kasna berba and the production of desertno vino.
- Deep alluvial soils ranging in texture from clay ilovača to sandy ilovača have developed in karst fields, with variable lime content.
Human factors
- Viticulture in Dalmatia experienced a major boom in the mid-19th century; the first wine-growing cooperatives were founded in 1903 in Bol on Brač.
- Plavac mali crni is trained with short pruning and low crop loads exclusively on lean sites of southern/south-western aspect, a centuries-old local practice.
Product characteristics
- Red wines of Srednja i Južna Dalmacija: garnet-red colour, high alcohol, richness and extract, varying intensity of tannin ripeness, aromatically complex.
- Pošip bijeli yields a wine of golden-yellow colour, high alcohol, a full and distinctive palate, and a markedly characteristic aroma.
Terroir / wine link
- Mediteranska klima (>2,000 °C of active temperatures) with scarce summer rainfall produces alcoholic, full-bodied wines with soft acidity.
- Dry and warm autumns give rise to kasna berba of overripe grapes for desertna vina (min. 90 °Oe, sugar 28–32%).
- Fertile fliš soils and sun-exposed sites close to the sea are particularly well suited to the variety Plavac mali crni.
- Plavac mali crni delivers exceptional results only on lean sites of southern/south-western aspect with short pruning and low crop loads.
- The acid profile of the wines is dominated by tartaric acid; malic acid is low, and high day and night temperatures accelerate acid degradation during ripening.
