Natural factors
- Tertiary and Quaternary sediments dominate the area; the conglomerates are cemented by calcium carbonate.
- The coastal strip is a Holocene terrace with variable granulometry depending on the source sediments.
- Sub-humid climate with a summer water deficit concentrated in the flatland zones and a thermal peak in July–August.
- The relief ranges from the Ionian and Tyrrhenian coastlines up to the first slopes of the Sila, with terraced surfaces and rolling hills.
- Rainfall is concentrated in autumn–winter (peak from October to December), with minima in July–August.
Human factors
- The disciplinare has focused on the recovery of native Cosentine varieties, already prized on the tables of the ancient local nobility.
Product characteristics
- Predominantly fruity aromas (berries and stone fruits) and floral notes, as a recurring organoleptic trait across all typologies of the DOC.
