Terroir
Natural factors
- Mediterranean-continental climate at over 800 m elevation: harsh winters, mild summers, and wide diurnal temperature swings.
- Low annual rainfall (400–500 mm), offset by the high water-retention capacity of the páramo soils.
- páramo soils with clay-rich texture high in potassium, covered by rounded stones that promote drainage and ripening.
- The altitude enhances solar radiation, keeps the grapes healthy through ventilating winds, and raises the natural acidity of the wines.
Human factors
- Evidence of viticulture dating to the 12th century; the ordinances of Cuéllar (1547) already regulated vine abandonment and new planting.
- Recognised as a wine-producing comarca in 1979; the DOP «Vino de Calidad de Valtiendas» was approved in March 2007.
Product characteristics
- Reds with mineral nuances (gravelly soils) and pronounced acidity; rosés with aromas of raspberry, blackberry, and floral notes.
- Medium- to full-bodied wines, fresh and lively, with greater palate complexity than those from neighbouring zones.
