Terroir

• The temperate oceanic climate shows a very gradual gradient from west to east, transitioning from a predominantly oceanic influence to a more continental climate.
• To the west, a marine formation of tawny sands, often covered by loessic silts, gives rise to leached, acidic silty to silty-sandy soils known locally as boulbènes.
• To the east, the molasse — a continental argillaceous formation containing hard limestone beds that define the relief — gives rise to deep clay soils known as terreforts, or to shallow, stony, calcareous soils known as peyrusquets.
• The water-retention capacity of the soils increases from west to east, so that it is in the eastern sector — where summer rainfall is lowest — that the terreforts, the soils most capable of retaining water, are found.
• The relief consists of gentle rolling hills to the west and more deeply cut valleys, accentuated by the limestone beds, to the east.
