Terroir
Natural factors
- On the eastern slope to the right of the Greve and in the southern uplands, predominantly arenaceous units outcrop, while chaotic, clayey deposits characterise the hills to the right of the Greve.
- Gravelly and sandy soils form an almost continuous belt extending from Mercatale Val di Pesa to the course of the Greve near Ferrone.
- A belt composed of alternating limestone layers, marly limestones, and argillite complexes corresponds to the hills to the left of the Greve, as far as the Pesa uplands, from Mercatale Val di Pesa to Sambuca in the comune of Tavarnelle.
- The hillside vineyards are situated at an average altitude of between 200 and 400 metres above sea level, with suitable aspect and exposure.
- The climate of the appellation zone ranges from humid to sub-humid, with a summer moisture deficit, a mean annual rainfall of 867 mm (minimum 817 mm, maximum 932 mm), peaking in November at 121 mm and reaching its lowest in July at 32 mm, in accordance with the ustic moisture regime typical of the Tuscan inland hills.
Human factors
- The traditional training systems adopted are essentially limited to capovolto, Guyot, cordon, and, in rare cases, alberello, to meet the requirements of certain varieties.
- To avoid visual degradation of the landscape, pre-stressed reinforced concrete posts have been eliminated and replaced by traditional treated wooden stakes.
Product characteristics
- The white wine displays a straw-yellow colour of varying intensity, the red a ruby-red colour, and the rosé a delicate pink colour.
- All wine types show balanced physicochemical characteristics and a modest level of acidity, with aromas on the palate and nose that are characteristic and harmonious.
