Terroir

• The vineyards are situated at the foothills of the northern slopes of the Rhodopes, in the southern part of the Thracian Lowland, at elevations between 150 and 280 metres above sea level.
• The climate is moderately continental, with a total heat summation for the period of mean daily temperatures above 10°C (April–October) of between 3,500 and 4,000°C.
• The mean daily temperature of the warmest month is between 22°C and 23°C, and total annual precipitation is approximately 550 mm.
• Soils in the higher areas are cinnamon forest soils, transitioning in the lower areas to rendzinas and alluvial meadow soils.
• The relief of the area is gently undulating, becoming flat in the lower parts.

• The permitted vine-training systems for the production of wines with the PDO Asenovgrad include Umbrella, Moser, and mid-trunk double-arm cordon, combined with mixed and spur pruning with a bud load of up to 54 buds per vine.
• The permitted grape varieties for the production of red wines and rosé are Mavrud, Cabernet Sauvignon, Merlot, Rubin, Pamid, and Syrah, and the maximum grape yield is 9,000 kg per hectare.

• The rosés show aromas of strawberry and raspberry, with characteristic freshness on the palate and nuances of citrus fruit.

• The mild climate of the Rhodopes collar zone, the sandy-clayey cinnamon forest soils, and the constraints imposed by human factors create conditions in which the red wines display high acidity and lower pH, an intense deep-red colour, and dense tannins.
