Natural factors
- The principal bedrock is loess, over 20 m thick, forming the pedological foundation of the entire DOC Babadag area.
- The predominant soils are Chernisols, with an alkaline reaction (pH 8.0–8.2) and moderate calcium carbonate content.
- On the hillsides of Enisala, Sarichioi, and Zebil, skeletal rendzina soils appear, well suited to Cabernet.
- The climate has a mean annual temperature just above 11 °C and low rainfall of 400–445 mm per year.
- The terrain is hilly within the Central Dobrogea morphostructural unit, with vineyards at Jurilovca, Sarichioi, and Valea Nucarilor.
Human factors
- Archaeological evidence dated to the 5th–4th centuries BC at Histria attests to viticulture: wine amphorae discovered beneath the floor of a temple.
- Paul of Aleppo (17th century), accompanying Patriarch Macarius of Antioch, recorded in the Babadag area 'vineyards unlike any seen before, from which an extraordinary wine is made'.
Product characteristics
- DOC Babadag wines are characterised by balanced alcohol levels and acidity, high extract, and highly regarded sensory qualities.
- On the Casimcea Plateau, Cabernet Sauvignon produces dry red wines that reach among the highest quality levels.
