Industrial winemaking in Bailén began in 1964 with the founding of the Cooperativa Santa Gertrudis, which released its first bottled wines in the early 1980s.
From 1990 onwards, the wines of Bailén gained commercial recognition thanks to more rigorous grape selection and the modernisation of winemaking facilities.
The Molinera de Bailén variety is a mandatory component in all wines of this Geographical Indication and is used both for white wines made from red grapes and in blends with other red varieties for red wines.
The Molinera variety yields wines ranging from pale whites made from the free-run must to medium-colour-depth red wines produced by fermenting the entire harvest with skin maceration.
