Terroir

• The lithological substrate of the majority of vineyard plantings consists of loess 3–40 m thick, partially overlying hard, ancient pre-Palaeozoic, Palaeozoic, Mesozoic, and Tertiary bedrock.
• The relief is fairly rugged, with elevations between 100 and 467 m in northern Dobrudja, hilly to mountainous with sheltered depressions, and a structural tabular plateau below 200–300 m in southern Dobrudja.
• The dominant zonal soils in the vineyard areas are steppe mollisols such as kastanozem and chernozem, as well as forest-steppe mollisols such as cambic chernozem, developed predominantly on a loessic substrate.
• The temperate continental climate is partially moderated by the proximity of the Black Sea, the wetlands, and the Danube Delta, with mean annual temperatures of around 11 °C and rainfall that frequently falls below 400 mm per year.
• The influence of the sea is felt most beneficially in autumn, acting as a thermal regulator, while at Cernavodă the proximity of the Danube exerts an additional moderating influence on the vineyards immediately adjacent to it.

• White and rosé wines are clear in appearance, with colour ranging from greenish yellow to golden yellow or from pale salmon-pink to medium pink, a velvety palate, and aromas of flowers, hints of honey, and citrus notes in the characteristically aromatic varieties.
• Red wines show velvety texture and a ruby-red or deep garnet to violet, dark-red colour, with aromas of wild berries and dried plums, a tannic character, and good suitability for ageing in oak barrels.
