Terroir
Natural factors
- Zone between Béziers (Hérault) and the Aude, on limestone plateaus and molassic hills (puechs) bordering the Montagne Noire.
- Calcareous and clay-limestone soils are almost ubiquitous, with highly variable texture and depth (Miocene sediments, schists, marls, molasse).
- Distinctly Mediterranean climate: annual rainfall of 500–600 mm, with less than 100 mm falling between June and August; sea breezes temper the summer heat.
- Grape varieties: 80% black varieties (split between Merlot, Syrah, and Cabernet-Sauvignon), 20% white varieties (predominantly Chardonnay, Sauvignon, and Viognier).
