Human factors
- Viticulture, established as early as the 10th century on ecclesiastical lands, reached 40,000 ha in the 19th century before being destroyed by phylloxera in 1876.

Product characteristics
- Reds: red and black fruits, bell pepper notes, hints of menthol, present tannins; ageing potential of up to 5 years depending on the vintage.
- Rosés (direct pressing or saignée): fruity, vegetal, and sometimes floral aromas, long finish; Cabernet franc dominant.
