- A zone of 15 communes in the Hérault, forming an amphitheatre around the Étang de Thau, with an average altitude of approximately 50 m and slopes frequently below 1%.
- Red to beige soils of sandy-loam to sandy-clay texture, with few stones and relatively good depth.
- The Étang de Thau — described as 'a small inland sea of some twenty kilometres' — tempers the Mediterranean climate and promotes the ripening of white grape varieties.
