Terroir
Natural factors
- Platform basement over Mio-Pliocene sedimentary rocks arranged in a monoclinal structure, with cuesta relief developed on Sarmatian sandstones and limestones.
- Well-developed cuesta relief resulting from differential erosion, with four plateau subtypes: Sucevei, Câmpia Moldovei, and Bârladului.
- Ecoclimatic regime with strong Eastern European influences: high helio-thermal resources and low water resources.
- Extreme minimum winter temperatures: mean of −29.1 °C, with an absolute minimum of −32.5 °C recorded at Răcăciuni.
Human factors
- From the 14th century viticulture appears in documents; Alexandru cel Bun established the offices of paharnic and pârcălab to oversee the vineyards at Cotnari.
- Local varieties and variety-specific assortments for each podgorie were established during the pre-phylloxera period.
Product characteristics
- Light, moderately alcoholic wines with natural acidity (tartaric acid) of up to 11–12 g/l in the central zone, which is recommended for sparkling wine production.
- The colour of red wines ranges from lightly coloured in the north to deeply coloured in the south, reflecting differences in ecoclimatic conditions.
