Terroir
Human factors
- Quality sparkling wines are produced from the Gergana variety, which was obtained by crossing the Dimyat and Muscat Ottonel varieties.
- The base wine for naturally sparkling wines ages for a minimum of six months on the lees, after which it is closed with a tirage liqueur for secondary fermentation and aged for a minimum of 24 months before disgorgement.
Product characteristics
- The white wines display a complex nose with predominant citrus fruit and nuances of herbs, fresh grasses, and wildflowers, while the palate is fresh with balanced acidity and a lingering finish.
- The red wines carry aromas of black and red forest berries, dark plums, spices, vanilla, and nuts, while on the palate they are soft-tannined, balanced, and juicy with bright fruit freshness.
