Terroir

• The vineyards fall within the Northern Black Sea zone of the Continental-Mediterranean climatic region, and the proximity of the Black Sea exerts an influence on climatic conditions.
• Winters are mild and summers are dry, moderately warm, and sunny, with well-pronounced sea-breeze circulation on most days, while the mean elevation is 100–150 metres above sea level.
• The cumulative heat sum for the period with mean daily temperatures above 10 degrees Celsius (April–October) is 3,700 degree-days, and total annual precipitation ranges from 400 to 700 millimetres.
• The soil types in the area are leached and calcareous chernozems, sandy-clay and alluvial soils, which in combination with the climatic characteristics favour the production of grapes rich in aromatic compounds.
• The soils are sandy-clay with good water-air properties and a deep profile, spring is cool, summer is not excessively hot, and autumn is long, all of which favour the ripening of the grapes.

• The authorised grape varieties for the production of wine with the PDO Evksinograd are Dimyat, Muscat Ottonel, Chardonnay, Traminer, Cherven Misket, Vratsa Misket, and Riesling.
• The training systems used in the vineyards are Umbrella, Moser, and medium-trunk double-arm cordon, with pruning that is mixed and short, allowing a bud load of up to 54 buds per vine.

• The wine is white and dry, with a straw-yellow colour and a greenish hue, possessing a pleasant freshness and body, as well as rich floral aromas.
• The natural alcoholic strength of the wine produced from the grapes characteristic of the area is approximately 11% vol.–11.5% vol.
