Terroir
Natural factors
- Vineyards on loess plateaus at 95–230 m a.s.l.; loess thickness 17–24 m (Đakovo–Vinkovci plain), locally >100 m (Baranja hills).
- Loess substrate of aeolian origin, uniform mineral composition; material likely of Alpine provenance.
- Moderately continental klima; mean annual temperature 10.9–11.2 °C; precipitation 650–890 mm evenly distributed; sum of effective temperatures 1,450–1,650 °C.
- Continental temperature amplitudes favour acid retention at night and sugar accumulation during the day; Graševina yields musts with ≥2% more sugar than in western Croatia.
Human factors
- Viticulture declined during the Ottoman occupation (1526–1687); recovery was led by the great estates of Odescalchi (Ilok) and Eltz (Vukovar).
- Training system: single or double Guyot, medium-high trunk (40–120 cm), 10–25 buds per vine.
Product characteristics
- White wines: crystal clear, yellow-green to golden-yellow in colour, medium to full in alcohol, moderate acidity, full-bodied, with discreet to pronounced fruity, floral, and spicy aromas.
- Red wines: clear, ruby-red of varying intensity, moderate acidity, moderate intensity of tannin ripeness, pronounced fruity aromas.
Terroir / wine link
- Loess plateaus (95–230 m) and a moderately continental klima directly shape Graševina: higher sugar, lower acidity than in western Croatia.
