Terroir

• The vineyards are situated in the southeasternmost part of the Rhodopes, in immediate proximity to the border with the Republic of Greece to the east and south.
• The terrain of the region is distinctly low-ridge and valley in character, and the climate is transitional Mediterranean with a clearly pronounced influence of the Mediterranean Sea, which lies 60 km away.
• The total heat summation for the period with mean daily temperatures above 10 °C (April–October) is approximately 3,850 °C, and the mean daily temperature of the warmest month is 24.2 °C.
• The mean annual precipitation is 680 mm, and the duration of sunshine is among the highest in the country, reaching up to 2,266 hours per year.
• The soil types are leached and lessivated cinnamon forest soils of medium to heavy sandy-clay texture, and rendzinas formed over limestones, dolomites, igneous rocks, gneiss, and marble.

• The permitted wine-grape varieties for white wines are Chardonnay, Traminer, and Tamyanka, and for red wines and rosé — Cabernet Sauvignon, Merlot, Pinot noir, Syrah, and Alicante Bouschet.
• Vine-training systems in the vineyards include Ombrella, Moser, mid-trunk double-arm cordon, and mid-trunk single-arm cordon, with pruning being a mixed and short system with a load of up to 54 buds per vine.

• The white wines have a notable alcoholic strength and display characteristic mineral and saline notes on the palate.
• The red wines are highly extracted, full-bodied, fruity, and with a characteristic minerality.

• The distinctive soils formed over limestones and dolomites, combined with the climatic conditions of the region, determine the characteristic minerality of the wines.
