Terroir

• Soils: brown earths with a clay-loam profile and high mineral content — the foundation of the wines' minerality.

• Average temperature during the growing season 18.5 °C (May–September 13–23 °C), vineyard altitude 140 m above sea level.
• Relief: vineyards on south-, southeast-, and southwest-facing slopes, with plains also permitted; max. 11,000 vines/ha.
• Clay-loam soils have good water retention, ensuring moisture for the vine even during the hottest and driest periods.

• Blue varieties are vinified with maceration on the skins; malolactic fermentation proceeds by addition of Oenococcus oeni or spontaneously.

• Red wines are characterised by higher extractivity; with ageing they acquire a velvety smoothness and fullness.
• Sparkling wines from the region show elevated aromatics; they are fresh with persistent effervescence and a golden-yellow colour.

• The clay-loam soil with its high mineral content directly accounts for the strong minerality of Južnoslovenská wines.
