Natural factors

The vineyards on the land of the village of Staro Zhelyazare lie in a small basin at the foot of the southern slopes of Sŭshtinska Sredna Gora, in the northern part of the Thracian Lowland, with hilly relief at an elevation of 300 m above sea level.
The area belongs to the transitional-continental climatic zone, with a climate that differs slightly from that of the lowland parts of the Thracian Lowland.
The total heat summation for the period with mean daily temperatures above 10 °C (April–October) is 3,700–3,900 °C, and the total annual rainfall is approximately 600 mm.
The soils in the area are cinnamon forest soils of medium sandy-clay texture.
The distinctive microclimate of the Hisarya area is determined by its basin setting at the foot of Sŭshtinska Sredna Gora, while warm air masses advancing from the south bring mild winters and a relatively warm spring, and the mountain slopes provide excellent air drainage for the vineyards.
From a cultural and historical perspective, the area has been known since Roman times for its numerous mineral springs.

Human factors

The grape varieties authorised for the production of wine with the protected designation of origin Hisarya are Chardonnay, Traminer, Sauvignon Blanc, Cherven Misket, Pinot Gris, Welschriesling, Riesling, and Aligoté.
The vineyards are trained using the Umbrella, Moser, mid-trunk double-arm cordon, and Guyot systems, with mixed and short pruning to a load of up to 54 buds per vine.
