Terroir

• The vineyards lie at the beginning of the Pre-Balkan zone, east of the Arbanasi Plateau, with the northern slopes of Stara Planina to the south and the valley of the Yantra River and the Danubian Plain to the east.
• The terrain is gently rolling to flat, at elevations of 150 to 200 metres above sea level.
• The climate is moderately continental; a characteristic feature of the temperature regime is a rapid warming in spring and cooling in autumn, while natural air drainage makes late spring cold snaps and damaging winter frosts relatively rare.
• The total heat summation for the April–October period is approximately 3,700–3,820 °C, the mean daily temperature of the warmest month ranges from 20.3 to 23.8 °C, and mean annual precipitation totals 540 to 675 mm.
• The soil types are strongly leached chernozems, slightly eroded and mildly clayey, as well as dark grey and grey forest soils of a heavy sandy-clay texture.

• The permitted varieties for white wines are Chardonnay, Dimyat, and Aligoté, and for red wines — Cabernet Sauvignon, Merlot, and Gamza.
• Pruning is mixed and short, with a load of up to 54 buds per vine, and training systems include Umbrella, Moser, and mid-trunk double-arm cordon.

• The white wines show fruity aromas of southern fruits, with a fresh, soft, and balanced palate.
• The red wines are distinguished by a deep colour, aromas of dark forest fruits, and a rounded, fresh palate with soft tannins.

• The pronounced continental climate, the proximity of the Arbanasi Plateau — which blocks westerly winds and ensures a favourable temperature regime — the natural air drainage, and the favourable soil types, together with the constraints imposed by the human factor, define the distinctive character of wines with PDO Lyaskovets.
