Terroir
Natural factors
- The geographical area covers the territories of 12 communes in the south-west of the Var département, between Toulon and Saint-Cyr-sur-Mer, forming a morphologically coherent unit.
- The area can be likened to an amphitheatre roughly ten kilometres wide on average, bordered by hills of 200 to 300 metres, opening onto the sea at Saint-Cyr-sur-Mer, with ridges such as the hills of Castellet, Bandol, and the Gros Cerveau de Croupatier at its centre.
- The soils, predominantly dating from the Triassic period, form an east–west ridge between Saint-Cyr and Bandol and an arm extending to the south of Beausset, with red sandstones or clays and occasionally layers of compact limestone; the parent rock has given rise to relatively shallow soils (70 to 80 cm).
- Sunshine levels rank among the highest on the Provençal coast, averaging 3,000 hours per year, while the Mistral, a cold, dry wind from the north, has a significant impact on the area's climate.
- Around the amphitheatre, the landscape is dominated to the north by the high plateaux of the Sainte Baume massif, rising above 600 metres, to the east by the slopes of Mont Caume, which peaks at 801 metres, and to the north-west by the Siou Blanc plateau.
Human factors
- Growers have adapted the slope topography by creating numerous restanques (terraces), whose width and depth decrease with altitude, ranging from 30 to 5 metres.
