Terroir

• The vineyards are situated in the northern part of the Upper Thracian Lowland, with the slopes of Sredna Gora and Stara Planina lying to their north, shielding them from the cold air masses that push in from the north.
• The climate is transitional-continental, moderated to a degree mainly by the protective influence of Stara Planina, with mild winters and cool summers.
• The total heat summation for the period with mean daily temperatures above 10 °C (April–October) falls within the range of 3,400–3,800 °C, and the mean daily temperature of the warmest month is 23.1 °C.
• The mean annual precipitation total falls within the range of 550–600 mm.
• The soils are leached chernozem smolnitsa (vertic chernozems), ranging from slightly to moderately clayey.

• The indication of a smaller geographical unit, such as a sub-zone or a vineyard block, on the label is permitted only if the wine is produced entirely from grapes originating from that sub-zone or vineyard block.
• Viticulture in the area is also shaped by restrictions arising from the human factor, combined with the climatic conditions and the characteristic soils.

• The rosé displays a delicate raspberry-pink colour and an aroma of red forest fruits, predominantly wild strawberries and raspberries, while the palate is juicy and full, with a perception of sweetness and development towards caramel.
• The naturally sparkling wine from Chardonnay has a delicate, sparkling colour with greenish-gold hues, an aroma of fresh white mulberries and frankincense, and on the palate it is fresh, full-bodied, and dry, with a delicately tickling mousse and hints of honey, bread crust, raisins, and frankincense.

• The transitional-continental climate, influenced by the proximity of Sredna Gora and Stara Planina, temperature inversions, and soils of the leached chernozem smolnitsa type, in combination with restrictions arising from the human factor, underpin a viticulture whose grapes allow for the production of white and red wines typical of the area.
