Terroir

• The vineyards fall within the south-eastern part of the Danubian hilly plain, with a characteristic temperate continental climate conditioned by the proximity of the Black Sea.
• The vineyards are situated on hilly terrain with predominantly easterly and south-easterly aspect, at elevations of 80 to 100 metres above sea level.
• Annual rainfall totals approximately 590 mm, while during September and October, when the grapes ripen, precipitation is comparatively low — around 75 mm.
• The total heat summation for the period with mean daily temperatures above 10 °C (April–October) is 3,600–3,700 degree-days Celsius, and the mean daily temperature of the warmest month is 21.6 °C.
• The soils in the area are calcareous chernozems, of low to moderate depth, with a sandy-clay texture.

• The authorised wine-grape variety for the production of wine with the protected designation of origin Novi Pazar is Chardonnay.
• Vineyard training systems employed include Umbrella, Moser, and mid-trunk bilateral cordon, combined with mixed and short pruning to a load of up to 54 buds per vine.

• The wine is white, with an alcohol content of approximately 11% vol.–12.5% vol. and a titratable acidity of 6–7.5 g/l.

• The temperate continental climate, influenced by air currents from the Black Sea, combined with the hilly relief, well-aerated warm soils, and the constraints imposed by human factors, together favour the production of a white wine with a fine and elegant structure, natural fruit acidity, and a mineral character.
