Terroir
Natural factors
- Calcareous chernozems, shallow to moderately deep, sandy-loamy — warm, well-aerated with a light granular structure.
- Умереноконтинентален климат with Black Sea influence; hilly terrain with predominantly east and south-east aspect, 80–100 m a.s.l.
- Total heat accumulation for April–October: 3,600–3,700 °C; mean daily temperature of the warmest month — 21.6 °C.
- Annual rainfall approx. 590 mm; during ripening (September–October) only approx. 75 mm — favourable for concentration of the grapes.
- The soil and climatic conditions yield grapes with >21% sugars and approx. 8 g/l acidity — a direct link between terroir and sensory profile.
Product characteristics
- The white wine is distinguished by floral aromas, notes of peach, honey and apricot, a fine and elegant structure, and a mineral character.
- Ageing in barrique of selected oak lends the wine density and volume.
Terroir / wine link
- Calcareous чернозем + умереноконтинентален климат → grapes above 21% sugar and ~8 g/l acidity, yielding a wine of 11–12.5% abv with acidity of 6–7.5 g/l.
- Black Sea air influence + hilly relief with east/south-east aspect and diurnal temperature swings → fine structure, natural fruit acidity, and mineral character.
