Terroir

• The soils of the production zone display high genetic variability and are typical of the so-called 'red soils' (terre rosse), ranging from moderately deep to deep.
• From a chemical standpoint the soils are substantially similar to one another and, being low in stones, are reasonably well suited to agricultural use.
• Viticulture is most successfully practised in areas where the soil is sufficiently deep to compensate for water unavailability and summer drought.
• The climate of the area falls partly under the influence of a temperate-cool climate and partly under that of a Mediterranean climate, with marked diurnal temperature ranges, warm days and cool nights in summer, and mild winters, as Ostuni belongs to the lower Murgia plateau and the Valle d'Itria.
• Mean annual rainfall varies with altitude from 450 mm to 1,300 mm, with a typically Mediterranean seasonal distribution that concentrates approximately 70% of precipitation in the autumn–winter period.

• In the mid-nineteenth century, modern facilities for grape pressing and winemaking were established near the railway to facilitate commercial trade.
• Strong demand for wine from the northern regions, which were forced to make up for the French production crisis caused by phylloxera, drove an increase in vine cultivation in the area.
• The varieties cultivated in the zone include Ottavianello, Negroamaro, Malvasia nera, Notar Domenico, and Susumaniello, while Impigno, Francavilla, Bianco di Alessano, and Verdeca are identified as the most renowned grape varieties of the area.
