Natural factors
- Continental climate: hot summers, cold winters; precipitation ~550 mm/year, negligible during harvest (Sept.–Oct.).
- Soil types: strongly leached черноземи and dark grey forest soils at the foothills of the Central Стара планина and the Danubian hilly plain.
- The cumulative temperature sum for the period >10 °C (Apr.–Oct.) averages 3,850 °C; mean daily temperature in the warmest month — 22.8 °C.
- The soil-climatic conditions favour grapes with 22% sugar and acidity of 6–7.5 g/l, and wines with 12.5–13% vol. natural alcohol.
- The dark grey forest soils and умереноконтинентален климат define an aroma dominated by small red fruit nuances in the Гъмза variety.
Human factors
- The sole permitted variety is Гъмза — a traditional red variety trained using Umbrella, Moser, or mid-trunk double-arm cordon systems.
- Yield is capped at 9,000 kg/ha and extraction at 65 l per 100 kg of grapes, in order to achieve the characteristic small red fruit profile.
