Terroir
Natural factors
- The département covers 5,087 km² and is bounded by the Rhône to the west, the Durance to the north, the Var to the east, and the Mediterranean to the south.
- The Crau plain, formed from pebble deposits laid down at the ancient confluence of the Durance and the Rhône, constitutes a steppe-like area marked by the influence of the Mistral.
- Soils are clayey-calcareous and stony, sandy or even gravelly over molasse and sandstone, poor, well-drained, and susceptible to erosion.
- The Mistral, a dry, cold northerly wind, blows for nearly 100 days per year, frequently with gusts exceeding 100 km/h.
- Upland areas above 600 to 700 metres receive more rainfall and experience milder summer temperatures, notably in the Sainte-Baume massif and the northern part of the Sainte-Victoire.
- Much of the Arc valley — a river flowing from east to west and emptying into the Étang de Berre — is subject to large diurnal temperature swings, especially in winter, with severe night-time frosts.
