Natural factors
- Clay-limestone soils with good water retention, favouring slow ripening and the build-up of a complex aromatic profile.
- Areas with skeletal soils (sol scheletic) planted with Negru de Drăgășani, with edaphic conditions similar to those of the Sub-Carpathian hills.
- Sub-hilly relief at elevations between 135–180 m, dissected by inter-hill valleys with north-easterly or south-westerly aspects.
- Advection of moist air from the south-west and north-west; long, warm autumns favour the accumulation of anthocyanins.
Human factors
- Night harvesting, practised for sparkling wines, preserves the aromatic freshness and acidity of the grapes.
- Guyot simple, double Guyot, or Guyot Poussard training systems are adapted to the slope and variety to ensure crop control.
Product characteristics
- The red wines display a bright ruby colour with aromas of plum, blackcurrant, and raspberry, developing notes of mint and coffee upon ageing in barrique.
- The white wines evolve from elderflower and green apple toward honeycomb, with mineral impressions of cold basalt and a friendly acidity.
